Bread is made mostly from flour and to make flour, we harvest grain and crush it in a mill. It gets separated into its 3 parts, bran, endosperm and the germ. The endosperm is what makes pure white flour for white bread. The bran is the hard outer shell of the wheat kernel, and has fiber, vitamins and minerals. The germ is the core of the seed and has fats, vitamins, and antioxidants. All 3 parts are used in the making of wheat bread, which leads to its stronger nutrient profile and non-uniform composition.
